&lt;p&gt;The cupcakes turned out reasonably well, and the marbling looks really cool, but I was hoping that the nutella would add a level of moisture to the cake.  In fact, it dries out in the baking and completely cancels out the &amp;#8220;self icing&amp;#8221; eponym.&lt;/p&gt;
&lt;p&gt;Thats when I realized &amp;#8220;I have a lot of leftover nutella, why dont i just put it on top, like a normal cupcake&amp;#8221; and voila:&lt;/p&gt;

&lt;p&gt;With regards to the latter, my new bon appetit came and I thought the recipes this month looked much more appealing than the february issue.  The first thing I made out of it was&lt;a href="http://www.bonappetit.com/recipes/2010/03/pineapple_glazed_chicken_with_jalapeno_salsa"&gt; Pineapple Glazed Chicken with Jalepeno Salsa&lt;/a&gt;.&lt;/p&gt;
&lt;p&gt;This recipe was great because it was really fast and easy&amp;#8212;less than 25 minutes total.  Whats great is you can do most of the prep work while the chicken is cooking.&lt;/p&gt;
&lt;p&gt;I meant to serve it with Bobby Flay&amp;#8217;s blue cornbread, but instead just used some nice chips instead&lt;/p&gt;
&lt;p&gt;Here are some thoughts:&lt;/p&gt;
&lt;p&gt;I left the cilantro out, but added garlic in its place&lt;/p&gt;
&lt;p&gt;I used white pineapple, it was really cool&lt;/p&gt;
&lt;p&gt;I feel like the pictures dont do the glaze justice, but it turned out really well.&lt;/p&gt;

&lt;p&gt;(aka procrastinating thesis work)&lt;/p&gt;
&lt;p&gt;Earlier this week I made the Caponata found &lt;a href="http://www.bellalimento.com/2010/02/07/caponata/"&gt;here&lt;/a&gt;&lt;/p&gt;
&lt;p&gt;The most fun part by far was frying the eggplant, it reminded me of the food we would get at le marais in paris.  I didn&amp;#8217;t add any basil because its expensive and I didn&amp;#8217;t have any, but the red wine vinegar was a great finishing touch heres the rundown:&lt;/p&gt;
&lt;p&gt;Pros: lots of veggies, fun active work&lt;/p&gt;
&lt;p&gt;Cons: too salty, lots boring prep work&lt;/p&gt;
&lt;p&gt;But look at how beautiful it turned out&lt;/p&gt;

&lt;p&gt;I didn&amp;#8217;t make the crostini because I got lazy, however, you can get pretty much the same result by making toast&lt;/p&gt;
&lt;p&gt;On a related note I have been really into buying bread at panera bread co. lately.  Its right off campus and a little fresh bread really takes the meal to a whole other level&lt;/p&gt;
&lt;p&gt;For the caponata I bought this asiago cheese demi-baguette&lt;/p&gt;

&lt;p&gt;Overall it turned out pretty well, but I had a few problems with the recipe,&lt;/p&gt;
&lt;p&gt;for one, I didn&amp;#8217;t know whether the rice was supposed to be cooked or uncooked, I figured uncooked because of the 1/2c water the recipe calls for, but instead I used boiled rice and left the water out&amp;#8212;a wise decision I felt.&lt;/p&gt;
&lt;p&gt;Speaking of water, I also left it out of the sauce, using just the pureed tomatoes, and never draining the can.  This just comes down to a question of how thin you want your sauce to be, and honestly, I could have thinned it out a little, but it really wasnt a big concern of mine.&lt;/p&gt;
&lt;p&gt;The major change I made to the recipe was I used turkey instead of ground beef&amp;#8212;much healthier.  While this may have made me err a little on the bland side, its easily fixed with salt, pepper, and more sauce&lt;/p&gt;

&lt;/p&gt;</description><link>http://daninfrance.tumblr.com/post/373143670</link><guid>http://daninfrance.tumblr.com/post/373143670</guid><pubDate>Fri, 05 Feb 2010 19:47:00 -0500</pubDate></item><item><title>sweet potato enchiladas</title><description>&lt;p&gt;tonight, I made sweet potato enchiladas with a recipe i got &lt;a href="http://budgetbytes.blogspot.com/2010/01/sweet-potato-enchiladas-383-recipe-096.html"&gt;here&lt;/a&gt;, at budgetbytes&lt;/p&gt;
&lt;p&gt;of course, I had to put my own spin on it.&lt;/p&gt;
&lt;p&gt;Instead of flour tortillas i used corn, which allow for more, smaller enchiladas, have a much grittier texture, and in my mind, a much better flavor.  This substitution also allowed me to leave the corn out of the salad (as well as the cilantro, which Genna doesn&amp;#8217;t like)&lt;/p&gt;
&lt;p&gt;Additionally I subbed refried beans for black beans, because&amp;#8230;come on&lt;/p&gt;
&lt;p&gt;I served them with chips and a few extra tortillas&lt;/p&gt;
&lt;p&gt;the enchiladas&lt;/p&gt;

&lt;p&gt;Making them was super fun and easy, however, the most fun was not the preparation, but the presentation.  I used my new kitchen bowl set to serve them with salsa, spanish olives, sour cream, diced onion, and extra refried bean&lt;/p&gt;

&lt;p&gt;it was so nice to have the house to ourselves, we ate and talked and got to listen to this&lt;/p&gt;
&lt;p&gt;i know its cuban, but it really completed the atmosphere&lt;/p&gt;
